Indonesian-Style Beef & Rice Bowls
- In a large skillet heat curry paste over medium-high heat, stirring a few seconds or until fragrant. Add coconut milk, cinnamon stick, nutmeg, and cloves; stir to combine. Add beef; use a spatula to gently break up the beef into smaller pieces. Bring to boiling. Cook 5 to 7 minutes or until beef is cooked through, stirring occasionally. Reduce heat. Simmer, uncovered, 25 to 30 minutes more, stirring occasionally. Remove from heat; discard cinnamon stick.
- Serve meat mixture over rice. Top with cucumber slices, cabbage, shallot, chile, and cilantro; squeeze lime over the food.

Never cooked with red curry paste or unsweetened coconut milk before but it looked so easy and yummy I had to try this. I substituted ground turkey for the ground beef. It was a big hit with the family!

I would have browned the beef first then added the curry paste and coconut milk. It wasn't as robust as I thought it would be and I added more curry paste, but it was an easy, quick, fresh and healthy enough meal that it was still enjoyable. Perhaps it would be even better with a better quality curry paste.

This was easy & tasty. Even my 8 year old daughter enjoyed it. I added a wee bit more salt, and put the cilantro leaves right into the stew at the end. I also added thinly sliced orange peppers. Overall, it is great just as it is!

excellent flavors. not so thrilled with consistency. Next time I'll add coconut milk at the end.
