Honey-Sesame Snack Mix

Ingredients

cups rice square cereal

cups puffed wheat cereal

cups lightly salted brown rice crisps or chips
1 1/2
cups sea salt-flavor thin almond crackers or sea salt-flavor baked almond chips
1/2
cup pumpkin seeds (pepitas) or wasabi-flavor dried peas
1/2
cup unsalted soy nuts
4
teaspoons toasted sesame oil

tablespoons honey
2
tablespoons lemon juice
2
tablespoons reduced-sodium soy sauce
1
tablespoon sesame seeds
2
teaspoons prepared horseradish (optional)

Directions

  1. Preheat oven to 300 degrees F. In a shallow baking pan combine rice cereal, wheat cereal, rice crackers, almond crackers, pumpkin seeds, and soy nuts. In a small saucepan stir together oil, honey, lemon juice, soy sauce, sesame seeds, and, if desired, horseradish. Cook and stir just until boiling. Remove from heat. Pour over cereal mixture, tossing just until coated. Spread cereal mixture in an even layer.
  2. Bake for 20 to 25 minutes or until mixture is lightly toasted and crisp, stirring twice. Remove from oven. Immediately turn out onto a large piece of foil; cool completely.

Place cooled snack mix in an airtight container; cover. Store at room temperature for up to 2 days or freeze for up to 2 weeks.
