Honey-Rum Fruit Salad
cup snipped fresh mint
cup lime juice
cup rum or orange juice
16 ounce container fresh strawberries, hulled and halved or quartered
cups green and/or red seedless grapes
kiwifruits and/or golden kiwifruits, peeled and cut into 1/2-inch pieces
- For dressing, in a large bowl whisk together mint, lime juice, rum, and honey; set aside.
- Cut cantaloupe in half and remove the seeds. Use a melon baller to scoop out pulp. In a large bowl combine melon balls, strawberries, grapes, and kiwifruits. Add dressing; toss lightly to coat. Let stand for 15 minutes to blend flavors.
