Hearty Vegetable, Bacon, and Quinoa Quiche

Directions

  1. Preheat oven to 350 degrees F. Coat a deep 10-inch pie plate with cooking spray.
  2. Rinse quinoa. Using a rubber spatula, spread quinoa as evenly as possible over the bottom of the prepared pie plate.
  3. In a medium bowl stir together mushrooms, spinach, leeks, and bacon. Spread mushroom mixture evenly over the quinoa.
  4. In a large bowl whisk together the eggs, egg product, evaporated milk, shredded cheese, salt, and pepper. Pour into the pie plate (it will be full).
  5. Bake for 55 to 60 minutes or until set in the center and browned on top.

I prepared it just as directed and thought it was very tasty. The uncooked quinoa forms a crust at the bottom. My husband is more a traditional food eater and he did not care for the texture of the quinoa crust.

There are so many things that need to be changed with this:
I would recommend cooking the quinoa first before adding it to the base of the quiche. Unless you want a little bit of crunch...
After about 45 minutes, your cheese will start to get VERY brown on top. I would recommend putting foil over the quiche at this point for the remainder of the cook time.
60 minutes is not long enough to cook this all the way through. After 60 minutes, I ended up adding mine back to the over for another 20 minutes (covered).
And you can never go wrong with adding more bacon!
