Harvest Slaw

Directions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and caraway seeds and cook and stir 1 minute. Whisk in the vinegar and honey and bring to a simmer to combine. Season with salt and pepper.
  2. In a large bowl toss together the cabbage, apples, cranberries, and pecans. Add dressing and toss to combine. Top with cilantro.

4 stars--I've had a lot of parties, this was the 1st time I ran out of slaw---guests LOVED it! The flavors are a nice sweet/tangy compliment to heavy fall/winter dishes. But, no way it makes 12 servings, so I cut the rest of my cabbage head (probably had 12 cups total), tripled the dressing, and dumped in the whole bag of dried cranberries & it was still really yummy!
