Green Beans with Green Olive Dressing
cups pitted green olives
cup extra-virgin olive oil
cup fresh flat-leaf Italian parsley
tablespoons lemon juice
Freshly ground black pepper

pounds green beans, trimmed
  1. In a food processor combine olives, olive oil, parsley, lemon peel, and lemon juice. Cover and pulse with on/off turns until mixture is almost a paste. Season to taste with salt and pepper. Set aside for at least 30 minutes.
  2. Meanwhile, place green beans in a steamer basket; set over boiling water. Cover and steam for 10 to 12 minutes or until just tender. Transfer to a large bowl filled with ice water; drain well.
  3. Toss green beans with about half of the olive mixture before serving.
