Greek Orzo Chicken

Ingredients

3 ounce skinless, boneless chicken breast half

cup finely chopped tomato

tablespoons hot cooked orzo pasta (rosamarina)

Greek black olives, pitted and sliced

tablespoon crumbled feta cheese or reduced-fat feta cheese

Directions

  1. Saute or grill chicken breast until cooked through (170 degrees F). Top warm chicken breast with tomato, cooked orzo, olives, and cheese.
