Overnight Apple-Cinnamon Oatmeal
Ingredients
  • 4
    cups water
  • 1 1/2
    cups apple juice
  • 1
    cup steel-cut oats
  • 1/2
    cup regular barley (not quick-cooking)
  • 1
    teaspoon ground cinnamon
  • 1/2
    teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
  • 1/4
    teaspoon salt
  • 1/4
    cup packed brown sugar
  • 1/3
    cup coarsely chopped pecans, toasted
  • 2
    medium apples, coarsely chopped
  • Honey (optional)
  • Fat-free milk (optional)
Directions

1. Line a 3-1/2- or 4-quart slow cooker with a disposable slow-cooker liner. In slow cooker, combine water, apple juice, oats, barley, cinnamon, ginger, and salt.

2. Cover and cook on low-heat setting for 6 to 7 hours. Before serving, stir in brown sugar. Top with pecans and apples. Serve with honey and milk. Makes 8 servings.

I think that if you're used to eating a lot of "health" food and have an acquired taste for bleh, then this is the dish for you. Omit the fresh ginger and use ground ginger instead, add granulated sugar, vanilla & nutmeg after it cooks. It needs something else to give it some substance, maybe a little more complexity--possibly some sweetened milk, craisins or dried apricot. I have given up on the doctoring, so I'm just going to make some oatmeal muffins with it.

I love this recipe! Extremely delicious and healthy. A couple of the suggestions I have is cooking the apples with the oats and barley. Then it is similar to apples in a pie, yummy! I had a hard time finding not-quick cooking barley at my regular grocery store so I went to a natural foods store to buy it. I love adding vanilla soy milk right before eating it. This recipe makes quite a bit if it's only for one or two people just an FYI.

This oatmeal is a family favorit and I usually make it for them the night before a holiday. That way we don't have to think about breakfast the morning of the holiday (Christmas) and can enjoy the family and meal time. It is fine as is but I also leave out the salt.

Not sure how this got one star. I meant to give it 4 stars. This is a wonderful oatmeal recipe. I don't add the salt, and 1/4 cup brown sugar was too sweet -- I would add the sugar to individual servings. I didn't use a liner either -- just soaked the pot for a while and it cleaned up very easily.
