Gnocchi and Sausage

Directions

  1. Cook gnocchi according to package directions; drain, reserving 1/3 cup liquid. Set gnocchi and liquid aside.
  2. In a large skillet cook sausage slices, pepper, onion, and garlic over medium-high heat until sausage is brown and vegetables are tender. Add gnocchi, tomatoes, arugula, and reserved liquid to skillet. Heat through, gently stirring mixture occasionally.

This has wonderful flavor and super easy to make. I used two packs of Aidells cajun andouille chicken sausage, 2 cups arugula, 3 plum tomatos, 3 garlic. I browned the sausage first and deglazed with some white wine first before adding the veges. Will definitely be making this again!!!
