Gingered Turkey Meatballs with Sesame-Lime Sauce
Ingredients

egg, lightly beaten

cup panko (Japanese-style bread crumbs)
1/2
cup canned sliced water chestnuts, drained and finely chopped
1/2
cup finely snipped fresh cilantro

tablespoon grated fresh ginger
1
tablespoon reduced-sodium soy sauce

tablespoon sesame oil

cloves garlic, minced

teaspoon salt
1/4
teaspoon cayenne pepper

pounds uncooked ground turkey

cup sliced almonds, finely chopped
 
Sesame Lime Sauce
Directions
  1. Preheat oven to 425 degrees F. In a large bowl, combine egg, panko, water chestnuts, cilantro, ginger, soy sauce, sesame oil, garlic, salt, and cayenne pepper. Add turkey. Mix well.
  2. Shape into 28 meatballs. Roll meatballs in almonds. Place meatballs in a single layer in a 15x10x1-inch baking pan.
  3. Bake, uncovered, for 15 to 20 minutes or until done (165 degrees F)*. Serve warm with Sesame Lime Sauce. Makes 28 meatballs

Ingredients

teaspoons sesame oil

teaspoons sugar or sugar substitute** equivalent to 2 teaspoons sugar
Directions
  1. In a small bowl combine soy sauce, water, lime juice and sugar. Stir until sugar is dissolved.
