large (1-1/4 pound) sweet-tart apples peeled, cored, and diced (3 cups)

Spicy Caramel Glaze (see below)
1. Preheat oven to 325 degrees F. Lightly coat 10-inch fluted tube pan with cooking spray; lightly sprinkle with flour. Set aside. In a bowl combine the 3 cups flour, cinnamon, nutmeg, baking soda, chipotle, ginger, white pepper, salt, and cloves; set aside.
2. In a mixing bowl beat oil and sugar with electric mixer on medium speed until combined. Add eggs, one at a time; beat well after each addition. Beat in vanilla and as much flour mixture as you can. Stir in remaining flour mixture, apples, and pecans. Spoon batter into pan.
3. Bake 1-1/4 hours, until wooden toothpick inserted near center comes out clean. Meanwhile, prepare Spicy Caramel Glaze. Cool cake in pan 10 minutes; invert on rack. Place rack over baking sheet. Drizzle warm cake with Spicy Caramel Glaze, respooning glaze that drips on baking sheet over cake. Cool completely before serving. Makes 16 servings.

In a saucepan combine brown sugar, butter, whipping cream, and ground chipotle pepper. Bring to boiling, stirring occasionally. Boil gently 2 minutes. Remove from heat. Stir in vanilla. Let stand 1-1/4 hours until slightly thickened. Drizzle over warm cake.

We loved this moist,spicy cake although my husband had an odd feeling in his throat. He adores apple cake and I love to make new ones especially not typical Dutch! It is a pity though that I have to convert the recipes to the metric system but that is inevitable.
11/6/2011 01:13:24 PM Report AbuseMy husband and I loved this cake. The flavors are fabulous, and the chipotle pepper gives a satisfying heat at the back of the throat. Although my husband thought it was perfect, I did had a very odd feeling in my throat and chest area - kind of a constricted sensation. Curious. At any rate, I think that I may experiment with the amount of chipotle powder to see if I can avoid that reaction.

I tend to be generous with the cloves, ginger, cinnamon & nutmeg (which is fine with this recipe) however, I measured the "pepper" spices exactly and it came out perfectly. I wouldn't suggest bumping those up. The cake has just a tiny, interesting aftertaste of hot that blends wonderfully with the other spices. Not a "typical" apple cake, but delicious!
