Cranberry-Raspberry Freeze
Ingredients
  • 2 cups  fresh raspberries or one 12-ounce package frozen raspberries, thawed
  • 1/2 cup  boiling water
  • 1 1/2 cups  cranberry juice, chilled
  • 1 cup  ice cubes
  • 1 12 ounce can lemon-lime carbonated beverage, chilled
  • Fresh raspberries (optional)
  • Lemon slices (optional)
Directions

1. Put 2 cups raspberries in fine-mesh strainer placed over large glass measure or pitcher. Pour boiling water over raspberries. With back of spoon, press berries to release juice. Discard berry pulp; reserve juice (should have about 1 cup). Chill.

2. In a blender container combine cranberry juice and reserved raspberry juice. With blender running, add ice through opening in lid. Blend until slushy.

3. Transfer juice to pitcher. Slowly pour in carbonated beverage; stir. Serve over ice. If desired, add fresh raspberries and a lemon slice.
