Apricot Iced Tea
Ingredients

    black tea bags
  • 6
    cups boiling water
  • 1/2
    cup fresh mint leaves
  • 3
    11 1/2 - 12 ounce can apricot nectar
  • 1
    teaspoon vanilla
  • Ice cubes
  • Fresh apricot wedges (optional)
  • Fresh mint sprigs (optional)
Directions

1. In a large heatproof pitcher, combine tea bags, boiling water, and the 1/2 cup mint leaves. Let steep for 5 minutes. Remove and discard tea bags and mint. Cover tea; let stand for 1 hour. Stir in apricot nectar and vanilla. Cover and chill for 4 to 48 hours.

2. To serve, fill tall glasses with ice cubes. Fill with tea mixture. If desired, garnish with apricot wedges and/or mint sprigs.

this was definately refreshing and it was nice not to have to add extra sugar to get some sweetness. I think a little less mint would have let the apricot / tea combination be highlighted more. I made 1/2 with vanilla and 1/2 without. I prefered the tea without it.
