To avoid cutting into three different melons, look for melons already cut in balls or cubes in a supermarket produce section. Or use 2 cups of a single melon variety.

Sorbet Melon Parfaits

Ingredients
2/3
cup seeded watermelon balls
2/3
cup cantaloupe balls
2/3
cup honeydew melon balls
1/2
cup mango or lemon sorbet
1/4
cup champagne or sparkling grape juice, chilled
 
Fresh mint sprigs (optional)

Directions

  1. Arrange the watermelon, cantaloupe, and honeydew balls in 2 wine glasses or goblets. Place scoops of sorbet on top of the melon.
  2. Pour about 2 tablespoons of the champagne over the sorbet and melon in each glass. If desired, garnish with mint sprigs. Serve immediately.
