Pineapple-Pear Crisp
Ingredients
-
5
ripe pears, peeled, cored, and halved lengthwise
-
1/4
teaspoon ground cinnamon
-
3
cups coarsely chopped pineapple
-
1/4
cup honey
-
1
cup rolled oats
-
1/3
cup whole wheat flour
-
1/3
cup chopped hazelnuts, toasted
-
2
tablespoons brown sugar
-
1
teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
-
1/4
teaspoon ground nutmeg
-
3
tablespoons cooking oil
-
Low-fat vanilla frozen yogurt or ice cream (optional)
Directions
1. Arrange pear halves, cut sides up, in a 2-quart rectangular baking dish. Sprinkle with cinnamon. Top with pineapple and drizzle with 2 tablespoons of the honey.
2. In a medium bowl combine oats, flour, hazelnuts, brown sugar, ginger, and nutmeg. Stir in the remaining 2 tablespoons honey and the oil. Sprinkle the oat mixture over fruit.
3. Bake, uncovered, in a 375 degree oven about 35 minutes or until pears are tender, covering with foil the last 5 minutes to prevent overbrowning. Serve with frozen yogurt. Makes 10 servings.
