Favorite Fruit Clafouti

tablespoons fruit-flavored liqueur (orange or raspberry) or 1/2 teaspoon rum extract plus 2 tablespoons orange juice

cups plain nonfat yogurt

cup all-purpose flour

cups raspberries, blueberries, and/or sliced strawberries

teaspoons sifted powdered sugar

Directions
1. In a large bowl beat together egg whites, whole eggs, granulated sugar, honey, liqueur or rum extract and orange juice, vanilla, and salt with a wire whisk or an electric mixer on low speed until light and frothy. Stir in yogurt until mixture is smooth. Add flour; beat until combined and mixture is smooth.
2. Grease a 10-inch quiche dish; arrange desired berries in bottom of dish. Pour batter over fruit. Bake in a 375 degree F oven for 30 to 35 minutes or until center appears set when shaken. Cool on a wire rack for 30 minutes. Serve warm. Just before serving, sprinkle with powdered sugar and, if desired, garnish with fresh raspberries and edible flowers. Makes 8 servings.
