Blueberry-Brie Quesadillas
Ingredients

7 inches flour tortillas

tablespoon butter, melted
4
ounces Brie cheese, cut into 1/4-inch-thick slices (remove rind, if desired)

cup fresh blueberries
1
cup fresh raspberries
1/4
cup honey

cup quartered fresh strawberries
Directions
  1. Preheat oven to 400 degrees F. Brush one side of each tortilla with melted butter. Place tortillas, buttered side down, on a large baking sheet. Place Brie slices on one half of each tortilla. Sprinkle blueberries over Brie. Fold tortillas in half. Bake for 8 to 10 minutes or until lightly brown and cheese is melted.
  2. Meanwhile, for sauce, in a blender or food processor container combine raspberries and honey. Cover and blend or process until smooth. Serve quesadillas with raspberry sauce and strawberries. Makes 5 servings.
