Corn and Broccoli Bake
10 ounce package frozen cut broccoli
egg, lightly beaten
14 3/4 ounce can cream-style corn
cup crushed rich round crackers (about 16 crackers)
teaspoon seasoned pepper
slices process American cheese food (0.75 ounce each), halved
cup crushed potato chips
tablespoons butter, melted
- Preheat oven to 350 degrees F. Place broccoli in a colander and run cold water over broccoli to separate. Drain well. In a medium bowl combine egg, corn, crushed crackers, and pepper. Stir in broccoli.
- Divide broccoli mixture among six ungreased 6-ounce baking dishes. Top with cheese. In a small bowl combine crushed potato chips and melted butter; sprinkle over broccoli mixture.
- Place baking dishes in a shallow baking pan. Bake, uncovered, about 35 minutes or until heated through.
