medium apples (such as Pink Lady), peeled (if desired), cored and chopped (about 3 cups)
1/4
cup finely chopped red onion
2
tablespoons snipped fresh sage or 2 teaspoons dried sage, crushed; or 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed
2

1
tablespoon olive oil
1
tablespoon apple brandy (optional)
16
French bread slices, toasted

Shaved sharp white cheddar or regular cheddar cheese

Honey (optional)

Directions

Bake, covered, for 25 to 30 minutes or until apples are softened, stirring once halfway through baking. Remove from oven. If desired, stir in apple brandy. Let cool slightly.
  2. Serve baked apple mixture warm atop French bread slices. Top with cheese and drizzle with honey, if desired.
