Winter Squash and Sage Sausage Chili

pound bulk sage sausage or your favorite sausage

15 ounce can cannellini beans, drained

12 ounce package frozen winter squash puree, thawed

cup chunky-style chipotle salsa or other salsa

cups water

3 1/2 ounce package herb-flavored goat cheese, crumbled

Fresh Sage (optional)
Directions
In large saucepan cook sausage over medium heat until brown and no pink remains, stirring to break up; drain fat. Stir in beans, squash, salsa, and water. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally. Serve in bowls; sprinkle goat cheese and fresh sage. Makes 4 servings.

Very good, and couldn't be easier. My husband and I both thought that there was too much sausage, though. Next time I'll do 3/4 lb of sausage and maybe add a can of drained diced tomatoes. It felt a little one-dimensional.

I used Italian sausage because I already had it, and then I sprinkled some dried sage into the soup while it was cooking. Turned out great!

Because my grocery store's chipotle salsa isn't the best, I substitute 1 chopped onion (sauteed w/ sausage), 14.5 oz can petite diced tomatoes, 6.5 oz water and few tablespoons chipotle taco seasoning for the salsa and 1.5 cups water called for in recipe. Delicious, fast and loved by my husband, 2- and 4-year olds!
