Spicy White Chili
Ingredients
  • 2
    cups chopped onions
  • 4
    cloves garlic, minced
  • 2
    tablespoons olive oil
  • 1
    4 1/2 ounce can diced green chiles
  • 3
    teaspoons chili powder
  • 1
    teaspoon dried oregano, crushed
  • 1/8
    teaspoon cayenne pepper
  • 3
    15 ounce can white kidney beans, rinsed and drained
  • 2
    14 1/2 ounce can reduced-sodium chicken broth
  • 5
    cups cubed cooked turkey or chicken
  • 4
    ounces Monterey Jack cheese with jalapeno peppers, shredded
Directions

1. In a Dutch oven cook onions and garlic in hot oil over medium-high heat for 5 to 6 minutes, stirring often, until tender. Stir in green chiles, chili powder, oregano, and cayenne pepper; cook for 1 minute. Mash one can of the beans. Add all beans and broth to ingredients in Dutch oven. Bring to simmering. Cook, covered, for 10 minutes.

2. Stir in the turkey; cook about 10 minutes, until heated. Stir in cheese until melted.

Wonderful recipe. Sauteed a 2.5 lb pk of boneless skinless chicken thighs for the meat and made just as written. Was a big hit!

This is by far the best chili ever!!!! My whole famly loves it... the first time I fixed it I make a single batch, I now have to triple the recipe to have enough for everyone! This is DEFINTELY a keeper!!!

I like this better than any tomato-based chili. I like coarsely crushed tortilla chips (used like crackers), and a dollop of sour cream. You can't beat it, it is definitely a keeper!

Served this with a beer batter bread (another new recipe) and both were awesome--will defintely make it again. Made my own broth since I wanted to try the recipe and needed to cook the meat. Followed recipe to the letter--was slightly thicker than I like so I added about 1/3-1/2 cup extra broth and was perfect. Has just enough zip, but not overly spicy so most would be able to enjoy. Recipe inidates 8-10 servings which is right on.

Made this last night and it got rave reviews...although there is no way this recipe could be equal to 8-10 servings, closer to about 4-6 depending on if it's the main course or not. Will for sure make it again!
