Southwest Barbecue Chicken
Ingredients
  • 1/2 cup  tomato sauce
  • 2 tablespoons  jalapeno pepper jelly
  • 2 tablespoons  lime or lemon juice
  • 2 tablespoons  quick-cooking tapioca
  • 1 teaspoon  packed brown sugar
  • 1 teaspoon  ground cumin
  • 1/4 - 1/2 teaspoon  crushed red pepper
  • 8 - 10 chicken thighs (2 to 2 1/2 pounds), skinned
  • 5 7 - 8 inches  flour tortillas
Directions

1. In a 3 1/2- or 4-quart slow cooker, combine tomato sauce, jelly, lime juice, tapioca, brown sugar, cumin, and crushed red pepper. Place chicken pieces, meaty sides down, on top of mixture in cooker.

2. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours. Serve chicken with tortillas.
