Sloppy Chicken Joes
Ingredients
  • Nonstick cooking spray
  • 3
    pounds uncooked ground chicken or uncooked ground turkey
  • 2
    14 ounce jars pizza sauce
  • 2
    cups frozen (yellow, green, and red) peppers and onion stir-fry vegetables, thawed and chopped
  • 1
    14 1/2 ounce can diced tomatoes
  • 8
    hoagie rolls, split
  • 8
    slices mozzarella or provolone cheese (8 ounces)
Directions

1. Coat a large skillet with cooking spray. Heat skillet over medium-high heat. Add chicken to hot skillet; cook until chicken is no longer pink, stirring to break apart. In a 3-1/2- or 4-quart slow cooker, combine chicken, pizza sauce, vegetables, and undrained tomatoes.

2. Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.

3. Arrange split rolls, cut sides up, on an unheated broiler pan. Broil 3 to 4 inches from the heat for 1 to 2 minutes or until toasted. Spoon chicken mixture onto bottoms of toasted rolls. Top with cheese and roll tops. Makes 8 sandwiches.

The sodium and cholesterol content is very high. At 323% DV, the calcium amount is a bit odd. 6 oz of meat per sandwich is a bit much esp. when you add pizza sauce, tomatoes and veggies. The photo also shows it being served with French fries - more calories, fat and salt. With extra buns and cheese, you could easily make 10 - 12 sandwiches lowering the calories and sodium. 12 sandwiches = 1/4 lb of meat each which is plenty for an adult.

the total calorie count depends on several factors. one is the grade of ground turkey or chicken used. the package in my freezer is 160 cal per 4 oz serving. this recipe calls for 3 lb meat and yields six sandwiches, which equates to 6 oz per serving. 1.5x160=240. approx 230 cal for a bbq size bun. add the slice of cheese, at least 120 cals per oz/slice and it's up to a total of 590. 61 cal remain for the sauce & veggies. bummer it adds up so quickly. trim 1/3 by making a smaller sandwich.
