1 1/2
pounds chicken pieces and/or desired meat (such as boneless pork chops or beef sirloin steak, cut 3/4 inch thick or chicken drumsticks, thighs, or breast halves)
-
1/2
cup bottled barbecue sauce
-
1/4
cup peanut butter
-
1/2
teaspoon finely shredded orange peel
-
1
- 2
tablespoons orange juice
1. Grill desired meat and/or chicken on an uncovered grill directly over medium-hot coals until pork is slightly pink in center and juices run clear, until desired doneness for beef, or until chicken is tender and no longer pink; turn once. (allow 12 to 14 minutes for pork chops, 12 to 14 minutes for medium steak, and 35 to 45 minutes for chicken pieces.)
2. Meanwhile, for sauce, in a small bowl combine barbecue sauce, peanut butter, orange peel, and enough of the orange juice to make sauce of desired consistency. Brush onto meat and/or chicken the last few minutes of grilling.
3. Place any remaining sauce in a saucepan and heat until boiling. Serve with the grilled meat and/or chicken. Makes 6 servings.
