Mixed Grill, Indian Style
- Grill desired meat and/or chicken on an uncovered grill directly over medium-hot coals until pork is slightly pink in center and juices run clear, until desired doneness for beef, or until chicken is tender and no longer pink; turn once. (allow 12 to 14 minutes for pork chops, 12 to 14 minutes for medium steak, and 35 to 45 minutes for chicken pieces.)
- Meanwhile, for sauce, in a small bowl combine barbecue sauce, peanut butter, orange peel, and enough of the orange juice to make sauce of desired consistency. Brush onto meat and/or chicken the last few minutes of grilling.
- Place any remaining sauce in a saucepan and heat until boiling. Serve with the grilled meat and/or chicken. Makes 6 servings.
