Hummus Crusted Chicken
Ingredients
  • 1
    15 - 16 ounce can navy beans, rinsed and drained
  • 3
    tablespoons olive oil
  • 3
    tablespoons lime or lemon juice
  • 4
    skinless, boneless chicken breast halves
  • Salt and ground black pepper
  • 2
    cups coarse soft bread crumbs
  • 2 - 3
    tablespoons olive oil
  • Lime or lemon wedges
Directions

1. For hummus, in a blender or food processor combine beans, the 3 tablespoons olive oil and the lime juice; process until smooth. Set aside 1/3 cup of the hummus for another use.

2. Sprinkle chicken lightly with salt and pepper. Spread chicken with remaining hummus; roll in bread crumbs.

3. Heat 2 tablespoons oil in a skillet over medium heat. Add chicken; cook 12 minutes or until no pink remains (170 degrees F), turning once. Add more oil, if needed. If crumbs brown too quickly, reduce heat. Serve with lime wedges. Makes 4 servings.

I loved this recipe. I didn't follow exactly. I used premade hummus from Trader Joe's and added lime juice and a little olive oil to make it easier to work with to coat the chicken. Then I coated it with regular bread crumbs. Was delicious. I too am wondering if I can bake instead of fry to make it a little less fattening. Maybe spraying the coated chicken with olive oil spray to make it crisp.

C'mon, BH&G ¿ you're better than this! It may be tasty and it may be easy, but **by definition** hummus is a dip or spread the base of which is chickpeas (garbanzos), NOT navy beans. White beans (and some brown ones) can make a fine dip, but do not try to pass this off as being hummus. It just isn't. (And I'm not even of middle eastern extraction.)

I did add some roasted garlic and smoked spanish paprika to my beans(cooked from dry)for a little more true hummus flavor. Agree with merpat! I do think it could be baked instead of fried. I would just drizzle or toss the bread crumbs with a Tbsp or 2 of olive oil. The chili carrots are a great side dish.
