I loved this recipe. I didn't follow exactly. I used premade hummus from Trader Joe's and added lime juice and a little olive oil to make it easier to work with to coat the chicken. Then I coated it with regular bread crumbs. Was delicious. I too am wondering if I can bake instead of fry to make it a little less fattening. Maybe spraying the coated chicken with olive oil spray to make it crisp.

It may be tasty and it may be easy, but **by definition** hummus is a dip or spread the base of which is chickpeas (garbanzos), NOT navy beans. White beans (and some brown ones) can make a fine dip, but do not try to pass this off as being hummus. It just isn't. (And I'm not even of middle eastern extraction.)
6/2/2011 10:01:01 PM Report AbuseI did add some roasted garlic and smoked spanish paprika to my beans(cooked from dry)for a little more true hummus flavor. Agree with merpat! I do think it could be baked instead of fried. I would just drizzle or toss the bread crumbs with a Tbsp or 2 of olive oil. The chili carrots are a great side dish.
