Hot and Spicy Braised Peanut Chicken

pounds skinless, boneless chicken thighs, cut into 1-inch pieces

tablespoons creamy peanut butter

teaspoon finely shredded lime peel

tablespoons soy sauce

tablespoons quick-cooking tapioca

cup unsweetened coconut milk

Hot cooked rice

Chopped peanuts (optional)

Snipped fresh cilantro (optional)
Directions
1. In a 3-1/2- or 4-quart slow cooker, place onions, carrot, and sweet pepper. Top with chicken. In a medium bowl, whisk together broth, peanut butter, lime peel, lime juice, soy sauce, tapioca, ginger, curry paste, and garlic until smooth. Pour over all in cooker.
2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours. Stir in coconut milk and peas. Let stand, covered, for 5 minutes.
3. Serve chicken mixture over hot cooked rice. If desired, sprinkle each serving with chopped peanuts and cilantro. Makes 6 servings.

4/23/2012 08:59:16 AM Report AbuseI'm glad I read the reviews too! I added the following ingredients to this dish and it was a total crowd pleaser. 3 Tbs Fish Sauce 3 Tbs more of Soy Sauce 1/4 cup more chicken stock 2 Tbs of Brown Sugar 1 Jalapeno

I doubled all the spices (including peanut butter), added jalapeños and chili paste, and cooked it fairly quickly in a wok. So I guess I made something different than the original recipe, but it was flavorful and good, unlike others' experiences.
1/20/2012 06:24:30 PM Report AbuseThis is OK, but not very spicy. less flavorful than I expected. I may, however, adapt this for stovetop cooking/ simmering rather than a long crockpot stewing for brighter flavor.
