Honey-Ginger Crusted Chicken
- Spray a shallow baking pan with nonstick spray. Place chicken breasts in baking pan. In a small bowl combine honey, orange juice, ginger, black pepper, and red pepper (if desired). Brush honey mixture over chicken. Combine cornflakes and parsley flakes. Sprinkle cornflake mixture over chicken to coat.
- Bake, uncovered, in a 350 degree F oven for 18 to 20 minutes or until chicken is tender and no longer pink (170 degrees F). Makes 4 servings.

1 star, boring, mild sweet not zesty flavor. I doubled sauce & cornflakes, and marinated chicken in sauce about 20 minutes. Needs salt & I'd add more ginger & red pepper. I coated both sides w/crushed flakes & baked on a rack in a cookie sheet to stay crispy, which it did, but it took about 20 minutes at 375.

I baked two chicken breasts at 350 degrees F for 18-20 minutes. I had to double the time just to get the meat up to 170 degrees. No way can you cook breast in 18-20 mins. (And yes, I preheated my oven.)
