Crock Posole
Ingredients

    14 1/2 ounce can golden hominy, drained
  • 1
    4 ounce can chopped green chili peppers, undrained
  • 1
    medium onion, chopped (1/2 cup)
  • 2
    clove garlic, minced
  • 1
    pound boneless, skinless chicken breasts and/or or thighs, cut into 1-inch pieces
  • 1
    14 1/2 ounce can tomatoes, undrained and cut up
  • 2
    14 1/2 ounce can reduced-sodium chicken broth
  • 1
    teaspoon dried oregano, crushed
  • 1/2
    teaspoon ground cumin
  • 2
    tablespoons snipped fresh cilantro
  • Fat-free dairy sour cream (optional)
Directions

Place hominy, chili peppers, onion, garlic, chicken, tomatoes, chicken broth, oregano, and cumin in a 3-1/2, 4-, or 5-quart crockery cooker. Cover and cook on low setting for 5 to 6 hours or on high setting for 2-1/2 to 3 hours. Stir in cilantro. Garnish each serving with fat-free sour cream, if desired. Makes 8 to 10 servings.

Definitely not a keeper...my husband loves hominy and this wasn't worth making. As the last reviewer said...very watery! I should have listened...

I think I will use Green Giant shoepeg corn instead of hominy. I don't really like hominy but I haven't had it since I was a kid....dont want to waste my ingredients.

This is an easy recipe to make..I did take the skin off the chicken but put the whole breast in and cooked it for approx 2 hours then I removed it and shredded the meat and put it back in the soup. I felt this gave the soup more body and flavor. I used "Hatch" chopped chili peppers from New Mexico..they have a lot of flavor. I liked the end result.

I've made it twice now; first time in crock pot but 2nd time in a big pot on the stove and made a double recipe for more leftovers. I think next time I'll make it with pork.

While the broth had a nice flavor the hominy was absolutely tasteless and the chicken was rubbery. If I were going to make it again -- which I doubt that I will -- I would use corn kernels instead of hominy and I would brown and shred the chicken. Overall this was very disappointing and a waste of ingredients.
