Chicken Noodle Toss with Greens
Ingredients

cups water

ounces medium rice sticks (noodles)

Sweet Spice-Rubbed Chicken breast halves, thawed and sliced (see Recipe Center)

tablespoons soy sauce

medium green onion, sliced

cup arugula leaves

cup packed basil leaves

cup lightly packed cilantro leaves

Crushed red pepper (optional)
Directions
1. Bring water to boiling. Place noodles in large bowl. Add boiling water. Let stand 10 minutes or until tender. Drain and transfer to a large bowl.
2. In large skillet heat olive oil over medium-high heat. Add chicken. Reduce heat to medium. Cook and stir for 2 minutes or until heated through. Remove from heat. Stir in lime juice, soy sauce, and green onion. Transfer to noodles in bowl. Add arugula, basil, and cilantro to noodles. Toss to combine. Sprinkle crushed red pepper. Makes 4 servings.

This was really good. I followed the recipe exactly even though I wanted to doctor it up. The seasoning on the chicken mixed nicely with the other ingredients to make a great sauce. The only suggestion I would have is that you need to do the noodles last, toss and serve right away. I put it in the warmer for a bit and it got somewhat gloppy and the noodles absorbed the sauce. I would have liked more sauce too so next time I will add another tablespoon or two of lime juice and Soy sauce.
