Chicken Burritos

8 - 10 inches flour tortillas

cups shredded cooked chicken, beef, or pork

cup bottled salsa

3 1/8 ounce can jalapeno-flavored bean dip

teaspoon fajita seasonning

ounces Monterey Jack cheese or cheddar cheese, cut into eight 5x1/2-inch sticks

Shredded lettuce (optional)

Dairy sour cream (optional)

Bottled salsa (optional)
Directions
1. Wrap tortillas in foil; heat in a 350 degree F oven about 10 minutes or until heated through.
2. Meanwhile, in a large bowl stir together shredded chicken, the 1 cup salsa, the bean dip, and fajita seasoning.
3. To assemble, place 1/3 cup chicken mixture onto each tortilla near one edge. Top chicken mixture with a stick of cheese. Fold in the sides of tortilla and roll up, starting from edge with the filling. Place filled tortillas, seam side down, in a greased 3-quart rectangular baking dish.
4. Bake, uncovered, in a 350 degree F oven about 30 minutes or until heated through. If desired, serve with lettuce, sour cream, and additional salsa. Makes 8 servings.

Phenomenal! Suggestions:For a soft burrito,cover pan with foil.When uncovered the edges are crispy&the tortilla seems dry. ALso,use freeze dried beans in a bag.They taste homemade.Usually are in the same area of the supermarket where the canned refried beans are.When I make Paula Dean pulled pork I have a ton of leftover pork. I was given this recipe book for Christmas. I've made this recipe for about 2 years now. Its a fav in our home.
