Cheese-Stuffed Chicken Breasts

cup ricotta cheese

cup shredded fontina or mozzarella cheese (2 ounces)

cup grated Parmesan or Romano cheese

teaspoons snipped fresh basil or 1/2 teaspoon dried basil, crushed

teaspoon snipped fresh oregano or 1/4 teaspoon dried oregano, crushed

teaspoon lemon-pepper seasoning

tablespoons butter or margarine, melted
Directions
1. Using your fingers, gently separate the chicken skin from the meat of the breast halves along rib edge.
2. For stuffing, in a small bowl combine cheeses, basil, oregano, and lemon-pepper seasoning. Spoon a rounded tablespoon of stuffing under the skin of each breast half. Place chicken, bone side down, in a 3-quart rectangular baking dish. Brush chicken with butter. Bake in a 375 degree F oven for 45 to 55 minutes or until no longer pink (170 degrees F). Makes 6 servings.
