Chicken Sausage Breakfast Casserole

Directions

  1. Coat a 3 1/2- or 4-quart slow cooker with cooking spray; set aside. In a large nonstick skillet heat oil over medium heat. Add sausage; cook for 6 to 8 minutes or until brown. Add sweet potato, sweet pepper, and onion; cook for 3 to 5 minutes or just until tender, stirring occasionally. Transfer sausage mixture to the prepared cooker.
  2. In a medium bowl combine eggs and milk. Stir in 1/2 cup of the cheese. Pour egg mixture over sausage mixture. Cover and cook on low-heat setting for 2 to 2-1/2 hours or until eggs are set.
  3. Sprinkle with the remaining 1/4 cup cheese. Let stand for 10 minutes before serving.
