Chicken, Pear, and Parmesan Salad
Ingredients

tablespoons cider vinegar or white wine vinegar

tablespoons olive oil or canola oil

tablespoon honey

teaspoon salt

teaspoon ground black pepper

cups torn fresh spinach leaves

cups shredded or chopped cooked chicken breast

pears, cored and cut into cubes

small red onion, thinly sliced

cup dried cranberries or raisins

ounce Parmesan cheese, shaved (1/4 cup)
Directions
  1. In a small screw-top jar combine vinegar, oil, honey, salt, and pepper. Cover and shake well; set aside.
  2. In a large salad bowl combine spinach, chicken, pears, onion, and cranberries. Drizzle dressing over salad, tossing to coat. Sprinkle with cheese.
