Cherry-Lime Pistachio Pralines

Directions

  1. Coat 12 2 1/2-inch muffin cups with nonstick cooking spray. Sprinkle a pinch of lime peel into each cup and then add pistachios, spreading each evenly. Set aside.
  2. Combine the sugar, evaporated milk, butter, salt, and oil in a 1-quart saucepan. Cook and stir over medium-high heat until mixture boils, stirring to dissolve sugar. Attach a candy thermometer to pan, reduce heat to medium, and cook for 5 minutes, stirring occasionally, until the mixture reaches 244 degrees F. Remove from heat. Stir in food coloring.
  3. Immediately spoon a scant tablespoon of the mixture into each prepared muffin cup. Allow to stand on a wire rack for 15 to 20 minutes or until set. Invert the muffin pan over and gently tap on the bottom of each cup to release each praline. (If a praline doesn't come out, loosen gently with the tip of a small sharp knife.)

I think 244 is too high. most praline recipes recommend 232 which is why I think mine hardened too fast to put in the muffin cups

Very tasty, however, the next time I make this, I will use 1/3 cup of evap milk, add an additional T of sugar and an additional 1/2 t of butter. There wasn't enough of the praline mixture to make all 12 muffin cups.
