Cardamom Old-Fashioned

Directions

  1. Muddle Cardamom-Vanilla Roasted Orange Slice with Cardamom-Clementine Syrup in an old-fashioned glass. Add bourbon or rye and large ice cube; stir. Add 1 dash bitters and club soda, if desired.

Cardamom-Clementine Syrup

Directions

  1. Using a vegetable peeler, cut peel from clementines or orange, avoiding the white pith. (Reserve fruit for another use.)
  2. In a small saucepan combine peel, sugar, water, and green cardamom pods. Bring to boiling; reduce heat. Simmer mixture until sugar dissolves, stirring constantly. Cool the syrup; transfer to a bowl.
  3. Cover and chill for 2 days. Remove cardamom and peel. (Peel can be used for garnish.)

Directions

  1. Preheat broiler; line a baking sheet with foil. Cut orange into 1/4-inch-thick slices; place in a single layer on baking sheet. Brush lightly with vanilla paste. Sprinkle lightly with ground cardamom. Broil 4 inches from heat for 7 to 12 minutes or until oranges start to char.
