Caramelized Onion Yukon Golds

Ingredients
 
Nonstick cooking spray

medium onions, thinly sliced
1/2
cup reduced-sodium chicken broth
1
teaspoon garlic, minced
4
6 ounces Yukon gold potatoes, cut in half lengthwise
1/4
teaspoon salt
1/8
teaspoon ground black pepper
1
ounce crumbled reduced-fat blue cheese

Directions

  1. Coat a 3- to 4-quart slow cooker with cooking spray. In cooker combine onions, broth, and garlic, tossing until well coated. Place potatoes on top of onion mixture.
  2. Cover and cook on low-heat setting for 5 1/2 to 6 hours or on high-heat setting for 2 3/4 to 3 hours.
  3. Remove potatoes; fluff each half with a fork.
  4. Stir salt and pepper into onion mixture in cooker. Divide onion mixture among potato halves. Sprinkle evenly with cheese.
