Apple Brownies
Ingredients

    eggs
  • 1 3/4
    cups sugar
  • 3/4
    cup vegetable oil
  • 1
    teaspoon vanilla
  • 2
    cups all-purpose flour
  • 1
    teaspoon baking powder
  • 1
    teaspoon ground cinnamon
  • 1/2
    teaspoon salt
  • 2
    cups finely chopped unpeeled apples
Directions

1. Preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with foil, extending foil beyond edges of pan. Grease foil; set aside pan.

2. In a large mixing bowl combine eggs and sugar. Beat with a mixer on medium speed for 2 minutes, scraping sides of bowl occasionally. Add oil and vanilla; beat until well combined. Add flour, baking powder, cinnamon, and salt. Beat on low speed just until combined. Stir in apples.

3. Evenly spread batter into prepared pan. Bake about 35 minutes or until a toothpick inserted into center comes out clean. Cool in pan on a wire rack. Use foil to lift uncut brownies from pan. Cut into bars.

I've made this twice now, and after tweaks the second time around it's a great recipe. I decreased the sugar to 1 and 1/4 cup, doubled the cinnamon and increased the chopped apple to 3 cups. We love the more balance sweetness! It's a keeper!
