Broccoli-Chicken Curry

Directions

  1. Preheat oven to 425 degrees F. Coat a large roasting pan with nonstick cooking spray; set aside. In a very large bowl combine the curry paste and coconut milk. Add chicken thighs, broccoli, and onions; toss to coat. Spread in an even layer in the prepared roasting pan. Roast, uncovered, for 30 to 40 minutes or until chicken is done (170 degrees F).
  2. To serve, transfer chicken, broccoli, and onion to serving platter. Top with cheese cubes and drizzle with cooking liquid.

i expected to love this, but i didn't. i used bone-in chicken thighs that had to be cooked longer and there just wasn't all that much taste to the dish, my son liked it though.
