Blueberry Fool

Ingredients

cups fresh or frozen blueberries, thawed
1/8
teaspoon ground cinnamon
1/2
cup whipping cream
1
tablespoon sugar
3
kiwifruit, peeled and chopped

Directions

  1. In a shallow dish use a potato masher to mash 1 cup of the blueberries. (Or puree berries in a small food processor.) Stir cinnamon into mashed blueberries.
  2. In a chilled medium bowl combine whipping cream and sugar; beat with a rotary beater until cream is very thick. Fold in mashed blueberries.
  3. In six 6- to 7-ounce dessert dishes or glasses layer whipped cream mixture with the remaining 1 cup blueberries and the kiwifruit. Serve immediately or cover and chill for up to 2 hours before serving.
