Traditional Cincinnati Chili

Traditional Cincinnati Chili
Ingredients
  • 5
    bay leaves
  • 1
    teaspoon whole allspice
  • 2
    pounds lean ground beef
  • 2
    large onions, chopped (2 cups)
  • 1/2
    teaspoon bottled minced garlic
  • 2
    tablespoons chili powder
  • 1
    teaspoon ground cinnamon
  • 1/4 - 1/2
    teaspoon cayenne pepper
  • 4
    cups water
  • 1
    15 ounce can red kidney beans, rinsed and drained
  • 1
    8 ounce can tomato sauce
  • 1
    tablespoon cider vinegar
  • 1
    teaspoon Worcestershire sauce
  • 1/2
    teaspoon salt
  • 1/4
    teaspoon ground black pepper
  • Hot cooked spaghetti (optional)
  • Sliced green onion (optional)
  • Shredded Parmesan or cheddar cheese (optional)
Directions

1. For spice bag, place bay leaves and allspice in center of a double-thick 6-inch square of 100 percent-cotton cheesecloth. Bring up corners and tie with 100 percent-cotton kitchen string; set aside.

2. In a Dutch oven, cook ground beef, onions, and garlic until meat is brown. Drain off fat. Stir chili powder, cinnamon, and cayenne pepper into beef mixture in Dutch oven. Cook and stir for 1 minute. Stir in the water, beans, tomato sauce, vinegar, Worcestershire sauce, salt, and black pepper. Add spice bag. Bring to boiling; reduce heat. Cover and simmer for 30 minutes. Uncover; simmer for 15 to 20 minutes more or until desired consistency. Remove spice bag; discard. If desired, serve chili over spaghetti. If desired, top with sliced green onion and cheddar cheese.

Obviously the recipe creator has never eaten Cincinnati Chili! They really should do some research before they add a recipe to their website!

This certainly is not Cincy Chili!!!!!! There are no beans or onions in the chili itself. When you make a five way it's a layer of spagetti on the bottom, layer of kidney beans, layer of uncooked onions, layer of chili and then a mound of finely shredded cheddar cheese. Just like loraeubank said Gold Star has cinnamon and Skyline has cocoa powder. Where did the recipe come from?

Beans are optional. Hamburger should be cooked in water to break it down to very fine pieces. Onions - 1 cup thru the food processor and cooked with meat till you can't see it anymore. The other cup should be a topping. No green onions. Lots of fine cheddar cheese on top, no parmesan. Gold Star type has cinnamon - Skyline type has chocolate.
