Spicy Beef and Noodle Salad
Ingredients
  • 1
    pound beef flank steak
  • 1
    tablespoon soy sauce
  • 8
    ounces rice noodles
  • 1
    medium English cucumber
  • 1
    cup packaged fresh julienned carrots
  • 1/2
    cup Asian sweet chili sauce
  • 1/2
    cup water
  • Fresh cilantro leaves
Directions

1. Preheat broiler. Brush steak with soy sauce. Place on rack of unheated broiler pan. Broil 4 to 5 inches from heat for 15 to 18 minutes or to desired doneness (160 degrees F for medium), turning once halfway through broiling. Thinly slice beef across the grain.

2. Meanwhile, cook noodles according to package directions; drain in colander. Rinse with cold water.

3. Slice cucumber crosswise in three sections. Using a vegetable peeler, cut lengthwise ribbons from sections.

4. Combine chili sauce and water. Divide steak, noodles, cucumber, and carrots among bowls. Drizzle with chili sauce mixture, sprinkle cilantro. Makes 4 servings.

Amazing, can't wait to have this again soon! I love lots of veggies, so I added fresh bean sprouts. And I also topped it with chopped peanuts. Instead of using 1/2 a cup of H2O though, I used 1/2 cup of Fish sauce and OMG the flavor was amazing! This taste may not be for everyone, but personally I love Vietnamese food, and this tasted just like I went out to eat!

WONDERFUL! I use to go to a restaurant near by and always got a bowl VERY simular to this one. So glad I came across this recipe. Not too spicy at all by the time you mix it all up. If that is a concern, then mix only half the amount of sauce called for to the water. An alternative to the flank steak next time I think I will try crusted shrimp. It will be cheaper too. The first time I made this I added chopped peanuts on top and couldnt get enough. Maybe add some bean sprouts too.
