All American Cheeseburger Soup

medium onion, chopped

14 ounce can lower-sodium beef broth

medium potatoes, scrubbed and coarsely chopped

14 1/2 ounce can diced tomatoes, drained

8 ounce shredded cheddar and American cheese blend (2 cups)

6 ounce can tomato paste

cup ketchup

tablespoons Dijon-style mustard

cup whole milk

Toasted buns or rolls

Cheeseburger toppings, such as pickles, onions, lettuce, mustard, and/or ketchup (optional)
Directions
1. In 4-quart Dutch oven cook beef, onion, celery, and garlic over medium heat until meat is browned and vegetables are tender; drain off fat. Sprinkle flour on beef mixture; cook and stir 2 minutes. Stir in broth and potatoes. Bring to boiling, stirring occasionally. Reduce heat. Simmer, covered, 10 minutes or until potatoes are tender.
2. Stir in tomatoes, cheese, tomato paste, ketchup, and mustard. Cook and stir until cheese is melted and smooth and soup just comes to gentle boiling. Stir in milk; heat through. Serve with toasted buns and cheeseburger toppings. Makes 6 main-dish servings.

2/10/2012 07:33:40 PM Report AbuseI thought this was good! Tasted like a cheeseburger in a bowl! I did not find the tomatoes or ketchup overpowering. The only thing I might omit next time is the potatoes. They just didn't seem to go because well...there are no potatoes in a cheeseburger. We dipped crusty bread into it. Yum!

Just looking at the ingredients it called for was a little odd to me...Ketchup and tomato paste...mustard...hmmm....I added chopped up bacon with cooking the beef, omitted the ketchup, paste and mustard, subbing in some dashes of jalapeno Tabasco sauce.It Turned out really good! Now after reading the reviews im glad I chose my judgment and skipped the extra tomato stuff...
12/8/2010 12:23:34 PM Report AbuseDISGUSTING!!! It wasn't even the same color as the recipe. I think the tomato paste and the ketchup was a bad idea. A huge waste of time and groceries (not to mention $$$)
