In a bowl stir together mayonnaise and thyme. Set aside 1 tablespoon of the mayonnaise mixture. Stir mustard into remaining mayonnaise mixture.
Spread mayonnaise-mustard mixture evenly over tortillas. Top evenly with roast beef, sweet peppers, and the 1/3 cup blue cheese. Roll up tortillas; brush with reserved 1 tablespoon mayonnaise mixture.
In a large skillet cook wraps over medium heat about 2 minutes per side or until light brown. Cut wraps in half. Divide greens among salad dishes. Drizzle olive oil and sprinkle additional blue cheese (if desired) over greens; top with halved wraps.
