Beef and Blue Cheese Wraps
Ingredients

tablespoons mayonnaise

teaspoon dried thyme, crushed

tablespoons yellow mustard

8 inches flour tortillas

ounces thinly sliced cooked roast beef

12 ounce jar roasted red sweet peppers, drained
1/3
cup crumbled blue cheese
4
cups mixed greens
 
Additional crumbled blue cheese (optional)
Directions
  1. In a bowl stir together mayonnaise and thyme. Set aside 1 tablespoon of the mayonnaise mixture. Stir mustard into remaining mayonnaise mixture.
  2. Spread mayonnaise-mustard mixture evenly over tortillas. Top evenly with roast beef, sweet peppers, and the 1/3 cup blue cheese. Roll up tortillas; brush with reserved 1 tablespoon mayonnaise mixture.
  3. In a large skillet cook wraps over medium heat about 2 minutes per side or until light brown. Cut wraps in half. Divide greens among salad dishes. Drizzle olive oil and sprinkle additional blue cheese (if desired) over greens; top with halved wraps.
