Smoky Black Beans
Ingredients
- 1/2 cup chopped onion (1 medium)
- 4 ounces cooked smoked chorizo, sliced, or 2 slices bacon, chopped
- 2 15 ounce canblack beans, rinsed and drained
- 1 cup reduced-sodium chicken broth
- 2 tablespoons lime juice
- 1 - 2 teaspoons chopped canned chipotle chile peppers in adobo sauce*
- 1/2 teaspoon ground cumin
- Salt
Directions
1. In a large saucepan, cook onion and chorizo or bacon over medium heat about 5 minutes or until onion is tender. Stir in black beans, chicken broth, lime juice, chile peppers, and cumin.
2. Cook, covered, for 10 to 15 minutes or until bean mixture is desired consistency, stirring occasionally. Season to taste with salt.

- Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
- Chipotle chile peppers in adobo sauce are very spicy. Use them sparingly, adding a little bit at a time. You can always add more.
