Basil, Chicken, and Tomatoes

Directions

  1. Cut tomatoes into wedges and divide among four serving plates. Use two forks to pull chicken meat from bones and shred into large pieces. Discard bones and skin.
  2. Arrange chicken and avocado slices on tomatoes. Drizzle with olive oil. Squeeze lime quarters over all. Sprinkle with basil, salt, and pepper.

My daughter loved this so much she wanted me to comment. I served this over cold/room temperature quinoa with a bit of garlic and lime juice to add some carbs before an evening soccer game. It was healthy, fast because I prepped it all ahead, and really really good. Thanks for the recipe!
