Tropical Shrimp Cocktail
Ingredients
- 2 tablespoons finely chopped kiwifruit
- 1 tablespoon finely shredded lime or lemon peel
- 1/4 cup lime or lemon juice
- 1/4 cup olive or cooking oil
- 3 cloves garlic, minced
- 1/2 teaspoon coarse salt or salt
- 1/4 teaspoon cracked black pepper
- few drops bottled hot pepper sauce
- 1 pound peeled and deveined, cooked medium shrimp (about 24)
- 1 cup kiwifruit, peeled and cut up
- 1 cup mango, peeled, pitted, and cut up
- Lime or lemon wedges (optional)
Directions
1. For marinade, in a small bowl, whisk together 2 tablespoons kiwifruit, lime peel, lime juice, oil, garlic, salt, black pepper, and hot pepper sauce. Reserve 2 tablespoons of the marinade; cover and refrigerate.
2. Rinse shrimp; pat dry. Place shrimp in a plastic bag set in a shallow dish. Pour the remaining marinade over shrimp in bag; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning the bag occasionally.
3. To serve, drain shrimp, discarding marinade. Toss reserved 2 tablespoons marinade with 1 cup kiwifruit and mango. Serve fruit with shrimp. If desired, serve with lime wedges.
