Tomato-Onion Salsa
Ingredients
  • 3 large tomatoes, seeded and chopped (about 2 cups)
  • 2/3 cup  chopped green onions
  • 2 tablespoons  chopped pepperoncini peppers
  • 2 tablespoons  vinegar
  • 1 teaspoon  finely chopped jalapeno pepper*
  • 1/2 teaspoon  salt
  • Torn greens
Directions

1. Combine tomatoes, green onions, pepperoncini peppers, vinegar, jalapeno pepper, and salt; mix lightly. Cover and chill for 2 to 48 hours. Serve over greens. Makes 6 to 8 servings.

  • Because chili peppers contain very pungent oils, be sure to protect your hands when preparing them. Put gloves or sandwich bags over your hands so your skin doesn't come in contact with the peppers. Always wash your hands and nails thoroughly in hot soapy water after handling chili peppers.
