Chili-Corn Snack Mix
Ingredients
- 1 tablespoon canola oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 2 cups toasted high-fiber corn cereal and/or crispy corn and rice cereal
- 1 cup tiny pretzel knots
- 1/2 cup whole almonds
- 1/4 cup dehydrated corn kernels
- 1/4 cup snipped dried apricots or whole dried cherries
Directions
1. In a large skillet heat oil, lime juice, and chili powder over medium heat 30 seconds. Add cereals, pretzels, and almonds. Cook 4 to 6 minutes or until cereal and almonds are very lightly browned, stirring frequently. Remove from heat. Stir in corn and apricots. Spread mixture on foil to cool. Makes 8 (1/2-cup) servings.
