Cheese Pedestal
pound white cheddar cheese
ounces Stilton or other blue cheese
tablespoons walnut halves and pieces
tablespoons chopped candied apricots
Fresh currants or dried cranberries (optional)
Honey (optional)
  1. Cut cheeses into wedges; cover with plastic wrap. Allow cheeses to stand at room temperature for 30 minutes to bring out their fullest flavors. Arrange the cheese wedges on a cake stand or plate.
  2. Sprinkle the cheese wedges with walnuts, candied apricot, and, if desired, currants. If desired, drizzle with honey. Makes 22 servings.
