Berry Blue Cheese Spread

8 ounce package cream cheese, softened

ounces blue cheese, coarsely crumbled

green onions, chopped

clove garlic, minced

cup coarsely chopped pecans

Assorted whole grain crackers or cracker bread, broken
Directions
1. Place dried berries in a small bowl. Pour boiling water over berries. Let stand for 1 minute. Drain; set aside.
2. In a large mixing bowl beat cream cheese and blue cheese with an electric mixer on medium speed until nearly smooth. Stir in drained berries, green onions, and garlic just until combined. Transfer spread to a serving bowl. Cover and refrigerate up to 4 hours before serving. To serve, sprinkle with pecans and serve with crackers. Makes 16 (2-tablespoon) servings.

On second thought, the 1/2 c dried blueberries is the perfect amount! Don't change a thing (except adding a Tbsp of milk at a time to mix it up). I have made this for about 5 different occasions and EVERYONE wants the recipe. This is an incredible, easy recipe! Don't hesitate to try it.

I followed the advice of the previous review, and only used 1 c. blue cheese (the 8 oz size of crumbled blue cheese), and I had to add milk for the mixer to even mix it evenly. I would use 1 c dried blueberries next time (just double the amount called for), so you really get the little flavor of blueberry in every bite! Great combination!
2/7/2010 03:07:22 PM Report AbuseThis was a big hit with blue cheese lovers at a neighborhood gathering. However, I used only 1 cup of blue cheese, which was sufficient for that flavor. The only other thing I would change would be to thin the cream cheese/blue cheese mixture with a few tablespoons of cream or milk before adding the berries, et.al. It is a very thick spread.
